Summer Feasts!!

Summer is flying by. Children are getting ready for back to school and parents are trying to get back into the routine. Life has been busy lately but I have taken the time to fix some healthy meals for myself  and since I haven’t posted in a while.  I thought I would share some of them with you now.

Pasta with Sun-dried Tomatoes and Broccoli

This meal was delicious and it was something I just threw together. I cook like Rachel Ray meaning I never measure anything but I will try to estimate what I used for this meal.

Box of pasta of your choice I used Whole Wheat Spiral

Head of fresh broccoli or frozen (I used fresh)

1 can cannellini beans

1/2 cup of sun-dried tomatoes

1/2 onion-diced

Olive Oil

First boil your pasta according to package directions. Then heat a pan under medium high drizzle olive oil to cover the bottom of the pan. Add your onions to the pan and saute them for 4-5 minutes until caramelized . Add the sun-dried tomatoes and get them nice and toasty(this was my favorite part of the meal). Then add your broccoli you probably do not need the whole head just add enough for your taste unless you are cooking for more people.Once pasta is ready drain it thoroughly and place some in the pan with other ingredients. I only added enough for myself since this was a meal just for me. Add sea salt and pepper to taste and if you want drizzle some olive oil on top. Enjoy!!

Another little something I threw together was what I am calling a Tofu Burrito. Even though I have been a vegetarian for almost 8 years now, tofu is something I have always been afraid of but since I want to be a vegan I have taken the plunge and been experimenting. This was a very good experiment even without the cheese!!

Whole Wheat Wraps


1-green pepper-sliced length wise

1 medium tomato-sliced

1-avocado-sliced and then mashed

1/2 cup of cubed extra firm tofu

sour cream and salsa optional Note: a brand called Tofutti makes a vegan sour cream just make sure it is the one without trans fat.

Before anything take the tofu out of the package and drain as much fluid as possible. If using the tofu that is already cubed I just dab it with a paper towel and then wrap it in the paper towel for five minutes. I would of used taco seasoning to flavor tofu but I did not have any so instead I put it in a bowl and then added chili powder, paprika, garlic powder and onion powder to taste, then let it sit while you prepare the other ingredients. Heat a skillet over medium high, drizzle olive oil to cover the bottom. Once heated add onions and peppers. Saute until caramelized. Now add the tofu and heat until nice and crunchy. Time to assemble your burrito. First mash the avocado and spread onto wrap, then add onions and peppers, tomatoes, then tofu. Now try to fold the burrito this was very challenging to me. I then added the sour cream and salsa to the top. Very good!!

Before I close I would like to take a moment and tell you about an exciting challenge going on at the Chopra Center. For those of you not familiar with Chopra Center it is a center founded by Deepak Chopra and David Simon,that takes an integrative healing approach to wellness. Both Chopra and Simon are authors of numerous books on well being. And today they started the 21-day Meditation Challenge. There are so many wonderful benefits to meditation and for someone who has never done meditatoin or has been intimidated by it, this is a great chance to learn and to start your own daily practice.
